What happened in the vineyard in the past?
Budburst (Feb~March) - in spring time when average temperature reaches 10°C, buds begin to grow into new shoots. The process is first fueled by vines' carbohydrate reserves, then supported by photosynthesis after leaves mature.
Flowering and fruit set (April~May) - plenty of sunlight is needed, and ideally little to no rain as to not disrupt the pollination process and reduce fruit set.
Flowering and fruit set (April~May) - continued.
Ripening (June~July) - change of color in the grapes' skins, also called Veraison. During this time, sugar levels increase while acid levels drop, and grapes' flavors and tannins will also develop.
Harvest (Aug~Sep) - the busiest season in the vineyard! Ideally weather is dry as too much rainfall before harvest will swell the grapes and dilute the flavors.
Winter dormancy (Oct~Jan) - leaves fall and shoots turn woody. vines become dormant until the following spring to preserve the carbohydrates in the roots.
